The elegant and delicate aroma of jasmine is followed by the soft fruitiness of white peach, and the refined citrus nuances of bergamot lightly bring it all together. Upon tasting, a bright lemon tea-like flavor spreads, and a clear, honey-like sweetness quietly lingers in the aftertaste. It is a clean, transparent cup, truly a Geisha from South America.
Origin Story
This farm was acquired in 2017 by Mr. Ronnie Gamez, former head of quality control at IHCAFE (Honduran National Coffee Institute/Research Center). As an agricultural engineer, Mr. Ronnie acquired this farm in the most fertile area of Honduras, with a climate most suitable for coffee cultivation. Utilizing his connections from his time at IHCAFE, Mr. Ronnie collaborated with agricultural engineers in La Paz department to gather the latest agricultural technology here. The farm was developed to become a model farm for specialty coffee production in Honduras. The farm constantly experiences the intersection of cold, humid winds from the north and warm, dry winds from the south, creating a unique microclimate. The most advanced post-harvest processing techniques have also been introduced. Cherries are put into floaters to remove overripe beans, then pre-dried for 3 days, followed by 28 days of drying on covered African beds. This slow drying process strengthens its resistance to temporal changes, and allows sweetness and fruitiness to permeate the green beans.
