vol.05 お家で淹れる、ふたつの夏

前回、同じ豆でも淹れ方でまったく違う顔を見せる、という話を書きました。


今回は、その続きです。


言葉で違いを説明するより、実際に淹れてみるほうが早いかもしれません。


というわけで、今回はレシピを、そのまま公開します。


道具も、手順も、難しいものではありません。


同じ豆で、両方ぜひ試してみてください。


キレのある一杯と、まろやかな一杯。


今日はどちらの気分でしょうか。


 


 

急冷ドリップ

浅煎り


豆:17g(中細挽き) 湯量:150g 温度:88〜90度


  1. 豆をセットしたら、40gのお湯を注ぎ、40秒蒸らします。

  2. 80gまで、ゆっくり注ぎます。

  3. 120gまで、同じペースで注ぎます。

  4. 150gまで注ぎ切ったら、お湯を落とし切ります。

  5. 抽出したコーヒーに、氷を入れて完成です。


深煎り


豆:20g(中挽き) 湯量:170g 温度:86度


  1. 豆をセットしたら、40gのお湯を注ぎ、40秒蒸らします。

  2. 80gまで、ゆっくり注ぎます。

  3. 120gまで、同じペースで注ぎます。

  4. 150gまで、同じペースで注ぎます。

  5. 170gまで注ぎ切ったら、お湯を落とし切ります。

  6. 抽出したコーヒーに、氷を入れて完成です。


浅煎りより湯量が多く、蒸らし後の注湯回数も1回多いのがポイントです。豆の量に対してお湯の量が多い分、しっかり抽出されます。


 


 

水出し(コールドブリュー)

豆:50g(粗挽き) 水:850g


  1. 粗めに挽いた豆を、不織布のフィルターに入れます。

  2. 容器にセットし、上から水を注ぎます。

  3. 常温のまま、15時間ほど置いておきます。

  4. 不織布を引き上げたら完成です。


夕方に仕込んでおけば、翌朝にはできあがっています。冷蔵庫で保存する場合は、不織布を引き上げたあとに移してください。


 


 


淹れ方が変わるだけで、こんなに味が変わるのかと、驚いてもらえたら嬉しいです。

Two Summers, Brewed at Home

 

Last time, we wrote about how the same beans can show a completely different face, depending on how you brew them.

This is the continuation of that story.

Rather than explain the difference in words, it's probably faster to just brew it yourself.

So this time, we're sharing the recipes, as they are.

Nothing here requires special tools or difficult steps.

Using the same beans, we hope you'll try both.

A crisp, clean cup. And a smooth, rounded one.

Which mood are you in today?


Drip

Light Roast

Coffee: 17g (medium-fine grind) Water: 150g Temperature: 88–90°C

  1. Set the coffee, pour 40g of water, and let it bloom for 40 seconds.
  2. Pour slowly up to 80g.
  3. Continue at the same pace, up to 120g.
  4. Pour the remaining water up to 150g, and let it fully drain.
  5. Add ice to the brewed coffee, and it's ready.

Dark Roast

Coffee: 20g (medium grind) Water: 170g Temperature: 86°C

  1. Set the coffee, pour 40g of water, and let it bloom for 40 seconds.
  2. Pour slowly up to 80g.
  3. Continue at the same pace, up to 120g.
  4. Continue at the same pace, up to 150g.
  5. Pour the remaining water up to 170g, and let it fully drain.
  6. Add ice to the brewed coffee, and it's ready.

Compared to the light roast, this uses more water and one extra pour after the bloom. With more water relative to the coffee, the extraction runs a little deeper.


Cold Brew

Coffee: 50g (coarse grind) Water: 850g

  1. Place the coarsely ground coffee into a non-woven filter bag.
  2. Set it in a container, and pour the water over it from above.
  3. Let it steep at room temperature for about 15 hours.
  4. Lift out the filter bag, and it's ready.

Set it up in the evening, and it'll be ready by the next morning. If you're storing it in the fridge, transfer it after lifting out the filter.
