vol.04夏に飲みたいコーヒー

こんにちは。

ムッとする暑さの日が多い、日本の夏。
皆さんはどう感じますか。 僕の周りでも、暑すぎる夏は苦手だという方が多いように思います。 たしかに、少し外に出るだけで汗が吹き出て、不快な気持ちになりますよね。 

そんな時、気持ちだけでも爽やかにしてくれるアイスコーヒーが欠かせません。


アイスコーヒーには大きく分けて、急冷ドリップと水出しがあります。

その2つが、同じ豆でも味わいが全く違う。
そのことに、いつも驚かされます。
産地も、焙煎度も、同じ。
変えたのは、抽出の方法だけ。 それなのに、グラスの中身はまったく違う顔をしています。 急冷なら、キレのある酸。輪郭のはっきりした一杯。 水出しなら、ゆっくり滲み出る甘さ。角の取れた一杯。 
豆は、何も変わっていません。 変わったのは、時間のかけ方と、温度と、水との触れ方。 コーヒーの味は、豆だけで決まるものではないのだと、あらためて思います。

 抽出とは、豆に眠っているものを、どう引き出すかという作業です。 同じ素材から、まったく違う表情を引き出せてしまう。 そこが、技術の面白さだと思っています。 技術というと、正確さや再現性の話に聞こえるかもしれません。 数字を合わせれば、同じ味になる。そう思われがちです。 けれど実際は、技術の先に、感覚が必要になります。

 今日の豆はどんな状態か。今日の気温、今日の湿度。 同じレシピでも、同じようには仕上がりません。
数字はあくまで指針で、最後に判断するのは、舌と、経験です。
技術が土台をつくり、感覚がその日の一杯を仕上げる。
このふたつは、対立するものではなく、重なり合っているのだと思います。


急冷か、水出しか。
その選択自体も、正解を選ぶという話ではありません。
同じ豆から、違う体験を引き出せることを、ただ楽しめばいい。
今日はどんな気分か。
それを選ぶのも、コーヒーの楽しみ方のひとつです。

Vol.04 — The Coffee We Reach for in Summer

Hello everyone.

Japan's summer — the kind that hits you the moment you step outside.
Some of you might feel the same way as many people around me do: summer can be a bit much. The heat is relentless, and just a few steps outdoors is enough to break a sweat and leave you feeling drained.

On days like that, there's nothing quite like an iced coffee to refresh your spirits, even just a little.

Iced coffee broadly falls into two categories: flash-chilled drip and cold brew.
What surprises me every time is how differently the same beans can taste depending on which method you use.

Same origin. Same roast level. Same beans.
The only thing that changes is the brewing method — yet what ends up in the glass looks and tastes completely different.
Flash-chilled drip gives you a crisp, bright acidity. A clean, defined cup.
Cold brew draws out a slow, gentle sweetness. A softer, rounder cup.

The beans haven't changed at all. What changes is the time, the temperature, and how the water meets the coffee. It's a reminder that coffee's flavor isn't determined by the beans alone.

Brewing, at its core, is the act of drawing out what's sleeping inside the bean. The fact that the same ingredient can express itself in completely different ways — that's what makes it endlessly fascinating.

When people hear the word "technique," they often think of precision and repeatability. Get the numbers right, and you'll get the same cup every time. That's the assumption. But in practice, technique alone isn't enough. Beyond the numbers, there's always a need for intuition.

What condition are the beans in today? What's the temperature, the humidity?
Even the same recipe won't produce the same result every day.
Numbers are a guide — but in the end, it's your palate and your experience that make the final call.

Technique builds the foundation. Intuition finishes the cup.
These two don't work against each other — they work together.

Flash-chilled or cold brew?
That choice isn't about finding the right answer.
It's about enjoying the fact that the same beans can offer entirely different experiences.

That, too, is part of what makes coffee worth savoring.
